October Unprocessed Day 1 - Mushroom Stroganoff

This is our third or fourth year participating in the October Unprocessed. We lok forward to it each year.
For breakfast I had a berry smoothie (blueberries, pea shoots, almond milk, orange, flax) and our son had a mulberry, papaya, mango chia cereal with almond milk and a pan (water) fried plantain.
For lunch we had leftover Potato Leek Soup with a salad.
Snack was dates and apples minced through the food processor, not quite applesauce.
Last night we had a variation of Dr Fuhrman's Cremed Forest Kale over Wild Rice and our Mushroom Stroganoff recipe. We used 3/4 cup cashews, just vegetable broth and kale instead of carrots.
