Fermented Carrots

We love fermented foods and love carrots, what could be better???

Ingredients for one quart:
1 pound of peeled and julienned
1/8 cup salt
1/2 gallon water
1 spring of rosemary
1 clove of garlic
1 grape leaf

dissolve the salt in the water to make the brine (The brine will keep in the refrigerator for 7 days.)
place the carrot sticks in a wide mouth 1-quart mason jar
add the rosemary sprig and garlic clove
pour brine until everything is covered
cover the carrots with a grape leaf
We use airlocks, so place airlock lid or use plastic mason jar lid
Place in on the counter out of the sun for 7-14 days.
Monitor brine level, adding more if needed.
Can store in the refrigerator for up to 12 months
