This Cucumber Crunch recipe is from The Complete Book of Raw Food. Julia Rodwell is the editor. Next time we make this we will add tomatoes for color.
Ingredients:
1 cucumber
4 sprigs of mint
1/2 tsp dill seeds
2 tsp Macadamia Kreme
10 macadamia nuts
1 orange juiced
2-4 dates
we used a high speed blender with a small jar and doubled the recipe. The recipe suggests using a coffee grinder. (the extra freezes well in ice cube trays)
1/2 onion, diced
Combine all the ingredients in a bowl and serve.
