Vegan Mafrum we baked these instead of frying them at 350 for 20 minutes. We used vegetable broth instead of oil
Moroccan Chickpea Stew 2 small sweet potatoes were substituted for the carrots.
Lentil Salad
3 cups cooked lentils
1 1/2 cups chickpeas
4-6 scallions
2 ripe tomatoes or 4-6 vine tomatoes
1/2 cup cilantro or parsley
juice if two lemons
3 cloves garlic, chopped
1/2 tsp cumin
salt and pepper to taste
1/8 tsp cayenne
2-3 TBS olive oil
Ethiopian Spiced Potatoes, carrots and cabbage
Snack Tray of almonds, figs, and chickpeas
Fig and Apricot Tart
