Menu 4/25-4/29

 Monday: dinner with friends at Torero's

Tuesday: Jerk Mushrooms
We substituted vegetable broth for oil. We baked the mushrooms at 350 for 30 minutes and served over rice. 

Wednesday: leftovers

Thursday: Black Forest Soup

Friday:  White Bean Alfredo with cherry tomatoes and green onions

Easter Meal 2022

My older boys smoked a brisket for the meat. We made the leek and mushroom risotto, sweet potato salad, and a green bean casserole. 

Leek and Mushroom Risotto

Sweet Potato Salad  


Green bean casserole
ingredients
1 pound fresh green beans, cut and steamed in the instant pot for 1 minute, drained and placed in a casserole dish.
1 1/2 cups of cannalini beans, cooked, rinsed and drained
1 TBS onion soup mix
1 onion, sauteed
2 garlic cloves, sauteed
2 TBS tapioca  starch
2 cups vegetable broth
1 can fried onions

Directions:
add all ingredients but the green beans to a blender. Add the blended mix toa fry pan to thicken.
When thickened pour over green beans
bake at 350 for 20 minutes
add fried onions and bake another 10 minutes

4/18-4/22 Menu


 Monday: Grilled Veggie sandwiches 
We substituted guacamole for the feta cheese. We served the sandwiches with leftover sweet potato salad. We also added a balsamic glaze to the veggies prior to grilling them.

Tuesday: Jambalaya Soup FoK spring 22, p.64  



Cajun Seasonings using 1/2 the cayenne and smoked paprika instead of sweet paprika

Wednesday: leftovers
 


Thursday: Tomato Pie and pasta primavera (no oil)
We made hempe bacon and vegan cheddar cheese using a gluten free crust.






Friday: Sweet Potato Planks with grilled salsa FoK spring 22 p. 57 with sauteed squash
ingredients:
1 yellow squash sliced
1 zucchini, slices
1 onion
4 garlic cloves
1 tsp Italian seasoning
salt and pepper to taste
vegetable broth for sauteing

 Monday: dinner with friends at Torero's


Tuesday: Thai Spring Rolls
We used chopped snow peas instead of edamame. We used sunflower butter instead of peanut butter. 

Wednesday: Pizza or leftovers

Thursday: Jerk Black Bean Soup with a Mango salsa from FoK spring  2022, p 74 

Friday: Mushroom and Leek Risotto 
We omitted the oil and sautéed in vegetable broth. We used vegan parmesan cheese.
