May Potluck 20

 This month's theme is Cinco de Mayo. Say some prayer for those who canceled at the last minute, vaccine reaction and sick family members.
June's theme is picnic foods

Lentil Walnut Tacos in lettuce wraps with Vegan Queso and Strawberry Salsa



The tomatoes were omitted due to a tomato allergy in the group with the tacos. Half a jalapeno was added to the taco "meat" 




Habernero Beans and Rice 

Saute one onion and garlic.
Add 2 cans drained and washed black beans.
Add 2 cans organic Rotel tomatoes
Cook Rice (about 2 cups)
Add cooked onion and garlic, beans, Rotel and rice, Mix well.

Garnish with cilantro.



Enchilladas


Chickpea-walnut crumbles
Kale and other veggies.
Corn tortilla 
Mole sauce
Soy based vegan cheese


jicama salad 


1 jicama diced
1 can rinsed and drained black beans
1 cup corn
1 tomato diced
1 red pepper diced
1 avocado
1/4 cup cilantro
1 cup blueberries


dressing
1/4 cup oil
garlic clove
3 TBS orange juice
3 TBS lime juice
3/4 tsp coriander seed
2 tsp minced shallot
