Ingredients
- 1/2 ripe sweet pineapple, cored, peeled and diced
 - 1 onion, diced
 - 4 garlic cloves, minced
 - 1 inch ginger, minced
 - 1 cup brown rice
 - 1 bell pepper, diced
 - 1 cup frozen mixed vegetables
 - 1/2 teaspoon salt
 - 1/2 teaspoon black pepper
 - 1/2 teaspoon turmeric powder
 - 1/2 teaspoon ground coriander
 - 1/2 teaspoon red pepper flakes
 - 1 tsp apple cider vinegar
 - 2 tablespoon coconut amino
 - 1 1/2 cups broth
 
Granish
- green onions for garnish
 - 1/2 cup cashews for garnish
 
Directions:
Everything in the instant pot with the manual setting for 25 minutes. Use the natural release. Stir in scallions and cashews and serve.
