King Oyster Mushroom Scampi (serves 2-3)
Ingredients:
9-oz King Oyster Mushrooms

8 cloves garlic, minced
1 shallot diced
1 green onion, chopped
2 TBS nutritional yeast
1/4 cup dry white wine, such as a pinot Grigio
1 TBS fresh thyme
1/4 cup fresh parsley
salt and pepper to taste.
juice of 1/2 lemon
Directions:
Saute the garlic, shallot, and mushrooms in the vegetable broth. When the mushrooms and shallot are soft, stir in the herbs, green onion, and the wine.
Serve over pasta
