This soup came to be due to an abundance of dill in our garden and my hubby's successful re-sectioning of his esophagus yesterday. He needs to eat soups for 5-7 days and is going raw for his healing.
Ingredients:
2 cups broccoli
1/4 cup onion
1 TBS miso
1/2 cup cashew, soaked for 2 hrs
1 zucchini or squash, peeled
2 cloves garlic
1 frond of dill
3 dates
1 TBS lemon juice
1 cup almond milk
2 TBS nutritional yeast
1 sprig of thyme
salt to taste
Place all ingredients in a high speed blender (with our blendtec there is a soup cycle to make it warm).
Looks wonderful. Al is in good hands with good food.
